Ingredients for 4 people:
5 roasted peppers,
2 tomatoes or about 10 cherry tomatoes,
optional- feta cheese,
chopped fresh basil,2 tablespoons olive oil,
1 tablespoon vinegar,
2- 3 cloves of garlic,
salt and pepper.
If you have frozen roasted peppers the salad will be ready in 10 minutes. Thaw them, pour their own juice and olive oil and finely chopped garlic. If you do not have, bake the peppers, cool them, peel and prepare in the same way. Tomatoes cut lengthwise into slices or rings, as you prefer.
Put a lot of salt and place in a colander so the slices do not overlap. Let stand for 30 minutes. After then, rinse in a cold water and dry with a cooking cloth. Slices of tomatoes brush with oil and bake in a pan on both sides – until golden brown-about 3 minutes. Cool.
Arrange the salad in a bowl: roasted peppers, grilled tomato slices, sliced tomatoes, crumbly feta cheese and finely chopped basil. All pour with a mixture of olive oil, vinegar, salt and pepper.
Serving: Well cooled. It’s great with grilled meat, and for these days, thanks to cheese, can be a complete meal.
