For the dough –

28 oz (800 grams) flour,

13.5 oz (400 ml) lukewarm water,

1 tablespoon salt,

1/2 tablespoon sugar,

1 tablespoon yeast,

3.4 oz (100 ml) oil.

For the cream:

17.7 oz (500 grams) spinach,

6.4 oz (180 grams) sour cream,

salt as you wish,

3 tablespoons oil,

For the coating:

1 egg yolk,

2-3 tablespoons oil,

3.5 oz (100 grams) butter.

Preparation: In one plate put the flour, add the yeast, salt and sugar and mix. Then add the butter and gradually add the water and knead the dough by hand and leave it to reach 30 minutes on a preheated oven of 122ºF (50ºC) and off. Spinach clean, wash and cut it finely and place in a pot on the fire to fry with the 3 tablespoons oil and salt it depending of your wish. After you fried, leave to cool. In the cooled spinach add sour cream and mix to make combination.

On the desk covered with flour we put grown dough, but we do not knead and roll piping crust. With glass or mold we make circles and each circle in the middle of the adhesive we filled with cream. The ends of the circle we unite and form ribbons.

The frying-pan we brush it with butter and put the ribbons as image. Break the egg and share the white and yellow part of the egg. We beat the egg yolk with fork, we add 2-3 tablespoons oil and mix. With cooking brush we cover the pie with mixed egg yolk . We melt the butter on fire and completely cover the pie . We put the frying-pan in oven heated to 392ºF (200ºC).

Bake it 40 minutes (until you get a golden brown) and remove it from the oven.

Serve it as you desire. Good appetite!
