Pastoral Pie


For the dough –
21.1 oz (600 g) flour,
1 tablespoon yeast,
1 teaspoon salt,
11.8 oz (250-300 ml) swamp water.

Other ingredients:

10.5 oz (300 g)  of cheese (sheep),
1 egg, sesame,
1 yogurt from sheep 19.6 oz (500 ml),
4-5 cloves of garlic,
3.3 oz (100 ml) of oil (about).


Mix the dough with warm water.
Divide into 12 balls. From each ball make little circle with a diameter of 5.9 inch (15 cm). Coated with oil for 9 rounds. The rest are on the top and we do not coat them. Four rounds are placed one on another.
Your make a peel which is sprayed with oil, pour the cheese curls like rolls. They are placed in a buttered pan.
Also create the other two layers rolls. You will cut the roll to obtain squares. Coat with beaten egg and strew with sesame.
Bake at 428ºF( 220ºC) until they get rose color.  Take the pie from the oven and coated with sour milk where we put pounded garlic. We return back in the oven for about 5 minutes.


I used black flour, which was quite wet and I have little problem with the dough as my mother would say, but still worked and was very tasty.
White flour will be perfect. When you pull out the peel it should be in the length of the pan in which you want to bake.
I love the sesame and I put in almost every kind of dough . If you do not want, you are free not to use it.
