Have to Try this Kind of Muffins!

You can make them like muffins or like cookies, the choice is yours. I made them like muffins because the children could easily eat them with their small handles and if you make in a form of a pie, you have to bake in a long pan and serve them with coffee or tea.

Time of preparation:  30 minutes.

Ingredients for 6 people:
4 large eggs,
4.4 oz (125 gr)
of powdered sugar,
7 oz (200 gr)
of flour,
1 bag 1.4 oz (40 g) vanilla puddings or cornstarch,
0.2 oz (6 gr) baking powder,
little salt,
2 tablespoons of oil,
2 tablespoons apple sauce,
a peel of 1 lemon,
1 teaspoon vanilla,
about 36 large cherries

Preparation:

Separate egg whites from the yolks and leave them on a room temperature. Then mix the flour, baking powder, vanilla pudding or cornstarch, add little salt and leave aside. Whip the egg whites into soft cream and then add a little powdered sugar and whisk to thick foam, add egg yolks one by one, and every time you add the yolks whisk very nicely to be connected with the mixture.
Add vanilla, lemon peel, oil and apple sauce (If you do not have apple sauce put 4 tablespoons of oil, I purposely add puree to reduce the amount of fat) and all mix together.

Take the wire for whipping and by adding a little flour, combine all together … mass is quite thick. Insert paper baskets in the pan for muffins and in each pour the mixture almost to be full.

Clean the cherries and put in each muffin, press them a little to get into the dough and the other two cherries you can put where you want, I purposely left the handles on two and from the one that I pushed into the dough, I took off the handle. Bake in the preheated oven at 347° F(175 ° C) for about 20 minutes or until you get the colour from the top. If you bake in long mould, well cover with cold butter, sprinkle with a little flour and shake off the surplus of the flour. Pour the mass into the mould, smooth from above and throw cherry, some of them push in the dough, some of them leave on the top.

In this mould you have to bake the dough little more time, at least half an hour to 40 minutes. Cool on a wire and serve with a juice, milk, coffee, tea or cold tea … whatever you like.
