Fruit Cake With Coconut
INGREDIENTS: for the crust:

10 egg whites,
10 tablespoons of sugar,
8.8 oz (250 g )coconut flour.

For the filling:

10 egg yolks,
10 tablespoons of sugar,
4 tablespoons flour,
16.9 oz (500 ml) of milk,
7 oz (200 gr) of butter,
17.6 oz (500 gr) pineapple,
3 packages cream


Mix the egg whites with a mixer, add sugar, mix a little more, and then gradually add the coconut flour while mixing with spoon.
Bake in a greased round pan in a preheated oven at 356 ºF (180 ºC), 30 min. Hot crust topped with pineapple juice.

Filling: Beat the egg yolks with sugar, add the flour and 5 tablespoons of cold milk. The remaining milk put on the stove to boil and cook in it the previously beaten egg yolks for about 10 minutes, constantly stirring. When the filling is cool, add the butter and all connect.

Filleting: the crust, the cream, pineapple and whipped egg on the top.
