Eggplant with Veal Meat!

Believe me this is the best eggplant ever made!

Ingredients for 2 people:

4 eggplants,
3 peppers,
half pound of veal I used calf muscles,
3 tomatoes,
2 onions,
2 cloves garlic,
salt,
1 teaspoon red pepper,
half teaspoon pepper,
or to taste.

Preparation:

Cut eggplants into cubes, season with salt and leave them to release water. Cut the onion and put in heated oil, add the garlic, to become little golden. Add the pieces of meat to the pot, add salt, and simmer, add little water not to be burned. When the meat become little tender, add the peeled and cut tomatoes, when the tomatoes released water, add some cut pepper. Rinse eggplant with salt and add to the pot, add salt, sprinkle with pepper and red pepper, if necessary add a little more salt and water, so that everything is in its juice and finish cooking.
