Cake “Greta Garbo
Ingredients For the crust:

5.2 oz (150 g) hazelnuts,
5.2 oz (150 g) of walnuts,
4 tablespoons of flour,
12 whites,
12 tablespoons sugar,

For the filling:

5.2 oz (150 g) sugar,
1.7 oz (50 g) butter,
4.4 oz(125 g)butter,
5.2 oz (150 g) dark chocolate,
12 egg yolks,
7 tablespoons of sugar,
4.4 oz (125 gr) butter.

For the glaze:

3.5 oz (100 gr) dark chocolate,
2 tablespoons oil


Grind the hazelnuts and walnuts and mix them with flour. Mix the egg whites with a mixer, adding sugar gradually. Combine egg whites with walnuts and hazelnuts slowly stirring with a spoon. Baking sheet with parchment paper, divide in 3 parts and bake 3 crust in preheated oven at 356 ºF (180 ºC) for about 20 minutes each.


1.  Fry 5.2 oz (150 g) sugar in a dry saucepan with 1.7 oz (50 g) of butter, until the sugar get melted and with hot caramelized sugar coat each crust. With the tip of the knife cut the coating of sugar to make easier later to cut the cake.

2.  5.2 oz (150 g) chocolate and 4.4 oz (125 g) butter melt in a saucepan and topped each crust over caramel. Allow to cool and get tight.

3.  Cook scrambled egg yolks with sugar on steam and, when the cream is cold,  add 4.4 oz (125 g) butter and unite the mass. With this filling coat the first layer, on which are already caramel and chocolate with butter, put it over another sheet and yellow filling, and all repeat with a third crust, and the rest of the filling coat the sides of the  cake.

For the glaze melt the chocolate with oil, stir well and cover the cake.
